This Blogger prefers proper butchers' sausage from most towns in the northern reaches of Lincolnshire OR even better still, sausage which he has made himself.
Recipe: fine ground pork sausage mince, a level teaspoon of sage for each sausage in the mix, black pepper, a smattering of smoked paprika, a small amount of ground garlic and a splash of Henderson's Relish.
Usually served as a patties rather than with sausage skin.
Keep in fridge for at least 5 days before pan cooking very slowly. (I use extra virgin olive oil.)  Overcook rather than risking undercooking.
